Ingredients

  • 1 16 oz bag frozen cheese ravioli
  • ¾ cup heavy cream
  • ½ cup milk
  • ¾ cup grated Parmesan cheese
  • 3 tbsp butter
  • 3 garlic cloves minced
  • 1 medium shallot finely chopped, optional
  • 1/2 cup reserved pasta water
  • ½ tsp Italian seasoning
  • ½ tsp black pepper
  • ½ tsp salt
  • Pinch of nutmeg optional

Method

  1. Cook the ravioli: Bring a large pot of salted water to a boil. Cook the ravioli according to the package directions, usually 3–4 minutes. Reserve 1/2 cup of pasta water, then drain.
  2. Sauté the aromatics: Melt the butter in a large skillet over medium heat. Add the garlic and shallot. Cook for 1–2 minutes until fragrant.
  3. Make the sauce: Add the heavy cream and milk. Stir and bring to a gentle simmer.
  4. Add Parmesan: Lower the heat and stir in the Parmesan until melted and creamy. Add Italian seasoning, salt, pepper, and optional nutmeg.
  5. Add pasta water: Slowly add the reserved pasta water, a little at a time, until the sauce reaches your desired creamy consistency. You may not need the entire cup.
  6. Add ravioli: Gently fold the cooked ravioli into the sauce until well coated.
  7. Serve: Top with extra Parmesan and black pepper.

Notes

Recipe Notes

  • Use your favorite cheese ravioli: Frozen ravioli keeps this recipe quick and easy, but fresh ravioli works too.
  • Don't overcook the ravioli: Cook just until tender so the pasta doesn't become mushy when tossed with the sauce.
  • Add pasta water slowly: You may not need the entire cup. Add it a little at a time to create a smooth, creamy sauce.
  • Keep the heat low when adding Parmesan: This helps the cheese melt smoothly without becoming clumpy.
  • Make it a complete meal: Serve with garlic bread, a simple salad, or roasted vegetables.
  • Want extra flavor? Add cooked chicken, Italian sausage, shrimp, or your favorite vegetables.
