I don’t know about anyone else’s home right now, but it’s almost late September here in Central Georgia, and I am officially ready for all the quick, easy, throw-together football foods. There’s something about football season that makes me want to have a table full of good food without spending the entire day in the kitchen.

I love making these with homemade turkey meatballs, a generous spoonful of marinara, and plenty of melty cheese tucked into a toasted sub roll. They’re hearty enough to be a meal, but easy enough to serve alongside all your other football favorites. And honestly, anything that gets requested year after year has earned a permanent spot in my recipe rotation.

So if you’re looking for something easy to make while the game is on, or you just want a cozy, saucy sandwich that the whole family will love, these Zesty Turkey Meatball Melts are it. Grab some napkins and let’s get cooking!

Why Turkey Meatballs?

I love using turkey for these meatballs because they’re a lightr option than traditional beef or pork meatballs, but they still have plenty of flavor! The key is making sure you don’t skip on the seasonings. Ground turkey has a milder flavor on its own, which makes it the perfect base for all of those savory Italian inspired ingredients.

The combination of garlic, Italian seasoning, Parmesan, and a few simple pantry staples gives these meatballs so much flavor. They come out tender and juicy on the inside with just the right amount of seasoning to stand up to the marinara sauce and melty cheese. It’s one of those recipes where a handful of simple ingredients really comes together to make something that tastes like you spent way more time on it than you actually did.

And if you’re short on time, store-bought or prepackaged turkey meatballs work perfectly fine, too! There is absolutely no shame in taking a shortcut when you need dinner on the table quickly. Just warm them according to the package directions, add your favorite marinara, pile everything onto your toasted rolls, and finish with plenty of cheese. Whether you make the meatballs from scratch or grab a package from the freezer section, you’ll still end up with a delicious, comforting sandwich that’s easy to make and full of flavor.

I like to cook these turkey meatballs right in a skillet with a little olive oil. The olive oil helps give the outside of the meatballs a beautiful golden-brown crust while keeping the inside tender and juicy. Cooking them in the skillet also adds an extra layer of flavor as the seasoned meatballs develop those delicious browned edges. Once they’re cooked through, they’re ready to be coated in warm marinara and piled onto your toasted sub rolls.

Once the turkey meatballs are browned in the skillet, I like to finish them in marinara sauce. Transfer the meatballs to a baking dish, pour the marinara over the top, and let them bake until they’re cooked through and soaking up all that delicious sauce. Baking them this way keeps the meatballs tender and flavorful while allowing the marinara to really soak in. It’s the perfect finishing touch before piling them onto toasted sub rolls and adding the cheese.

Pop them into the oven and let the meatballs bake in the marinara until they’re tender, cooked through, and full of zesty flavor

Pop them into the oven for a few minutes, just until the cheese is perfectly melted and bubbly and the rolls are warm and lightly toasted.

Ingredients

For the Turkey Meatballs
  • 1 pound ground turkey
  • ½ cup Italian-style breadcrumbs
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • ½ teaspoon garlic salt
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • 1 tablespoon Montreal steak seasoning
  • 2 tablespoons olive oil
For the Subs
  • 1 jar marinara sauce
  • 8 sub rolls or sandwich rolls
  • 16 slices provolone cheese

Equipment

  • Large mixing bowl
  • Measuring cups and spoons
  • Large skillet
  • Baking dish

Method

How to Make Them
  1. Make the meatballs. Add the ground turkey, breadcrumbs, basil, oregano, parsley, garlic salt, Parmesan, egg, and Montreal steak seasoning to a large bowl. Gently mix everything together until well combined, being careful not to overwork the meat.
  2. Brown the meatballs. Roll the mixture into meatballs and heat the olive oil in a large skillet over medium heat. Add the meatballs and cook, turning occasionally, until they develop a deep golden-brown crust on the outside. You don't need to cook them completely through at this point—the skillet is all about getting that delicious browned exterior.
  3. Let them soak up the marinara. Transfer the browned meatballs to a baking dish and pour the marinara sauce over them, making sure they're generously coated. Pop them into the oven and let them finish cooking in the sauce. This keeps the turkey meatballs tender while giving them plenty of time to soak up that rich marinara flavor.
  4. Build your subs. Once the meatballs are cooked through, spoon a little marinara onto each toasted sub roll and add the meatballs. I like to use about 3–4 meatballs per sandwich, depending on their size.
  5. Bring on the cheese. Top each sub with two slices of provolone cheese. Place the assembled subs on a baking sheet and pop them back into the oven for a few minutes, just until the cheese is melted, bubbly, and starting to turn golden around the edges.
  6. Serve. Finish with a little extra marinara and a sprinkle of fresh parsley if you have some on hand. Serve them hot and enjoy every saucy, cheesy bite.

Notes

  • Turkey meatballs: Be careful not to overmix the meatball mixture, as this can make the meatballs tough. Gently combine the ingredients until just incorporated.
  • Browning: Browning the meatballs in olive oil before baking adds extra flavor and gives them a delicious golden crust.
  • Marinara: Use your favorite jarred marinara or homemade sauce. A flavorful marinara makes a big difference in the finished subs.
